We are looking to recruit a Head Chef on a permanent basis. The successful candidate will be able to create and prepare their own dishes, as well as producing our pub classics and our seafood signature dishes. It is important that you have previous experience and are comfortable working with fresh seasonal produce and where possible locally sourced, as we make everything in house using said ingredients. Our food, takes influence from all over the world and so are looking for someone who is creative, skilful and passionate about their work. We and our customers have exceptionally high standards on the food the kitchen sends out. As Head Chef you will have the day to day responsibility for structuring and motivating the kitchen team and are after someone that values a happy working environment, alongside ensuring everything is done to the highest of standards. The role will be year round but with a big focus on ‘the season’, where we are at our busiest, with the autumnal and winter months being quieter and with reduced opening times.

Job Requirements & Responsibilities:

• Energetic and ability to deal with extremely busy shifts during the season
•  Having the ability to multitask and work efficiently under pressure.
•  Great experience of having worked in incredibly busy kitchens
• Full day to day Management of the kitchen
•  Managing a full kitchen team – briefing, supervising and motivating team members (many who will be seasonal).
• Managing the smooth creation and service of food from the kitchen.
• You must possess excellent attention to detail to ensure all food goes out tasting and look fantastic.
• 5* hygiene levels, including Level 3 Food Hygiene Certificate (ideally already have but for the right candidate can offer training).
• Great back-office knowledge when it comes to stock management, training and development, invoicing, health & safety, compliance and other management duties.
•  Fun and friendly that can engage with a local community and team.
• Ability to work closely with the Pub Manager
•  Ability to work closely with the Landlords (Simon & Sian), who will still be very much part of the daily workings of the Griffin. Simon, has been Head Chef and you will be learning the role and what the Griffin is from him. In time, you will have the opportunity to bring your own creativity and knowledge to the kitchen but this will be a gradual process as we make the changes to how we operate and the new changing roles of the Landlords.

This will include managing and overseeing the bar and restaurant as well as some aspects of the kitchen and working very closely with the Head Chef. The role will be year round but with a big focus on ‘the season’, where we are at our busiest, with the autumnal and winter months being quieter and with reduced opening times.

Job Requirements & Responsibilities:

• Energetic and ability to deal with extremely busy shifts during the season, with proven experience of working in said environment.
• Having the ability to multitask and work efficiently under pressure.
• Ensure the working environment remains clean & tidy & cleaning schedules adhered to at all times.
• Great back-office knowledge when it comes to stock management, training and development, invoicing, health & safety, compliance and other management duties.
• Ensure all cash or account procedures are followed according to company procedures and records maintained
• Ensure all Mise En Place requirements have been met prior to service
• You must possess excellent attention to detail to ensure all aspects of Front of House and Customer experience are met.
• Ensure the customers experience is one to remember. Provide a professional & efficient standard of service.
• Maintenance of tables to ensure the highest standard of hospitality.
• Fun and friendly that can engage with a local community and team, as well as welcoming all that drink and dine with us.
• Being able to recognise locals and their likes and dislikes as well as returning holiday makers (many who have been coming to Dale for years and years).
• Ensure staff are fully trained with opening, during & closing bar procedures as required/appropriate.
• Managing a full Front of House team (bar and restaurant)– briefing, supervising and motivating team members (many who will be seasonal) as well as liaising with the kitchen team
• Ability to work closely with the Head Chef, in order to ensure smooth running of all areas and managing elements of the kitchen in order that they work in harmony with the FOH etc.
• Ensure staffing levels are correct. Liaise with Head Chef/Senior Kitchen Staff to ensure adequate staffing.
• Ability to work closely with the Landlords (Sian and Simon), who will still be very much part of the daily workings of the Griffin. It is a time of change at the Griffin and therefore we are after someone that can work with us as we adapt to a more hand-off approach.
• Willingness to relocate to rural West Wales
